Christy Gene Banana Cream Pie

In my post for our Grandpa I mentioned his love for pie. My auntie Corine brought up how he knew every single pie shop in the 10 hour journey (between Denver-Alliance-Rapid City) he and grandma often would drive to visit all of the fam. So, after his funeral of course the main food group served was pie! My sweet momma, who is visiting us in NZ, missed out on being able to truely celebrate and send her dad off at his funeral, so we did the best we could at Cody and Liv’s house celebrating Gramps by doing something he loved…eating pie… with a few burps and maybe a toot here and there :0) Thanks for the advice Corine, because through your prompting this Christy Gene Pie was birthed in memory of Grandpa and his favourite pie…Banana Cream…this is the slightly “redeemed” version that will remind me of him forever.Ingredients:

Crust:

  • 2 cups spelt flour
  • 110 grams butter
  • 3 T maple syrup

Pastry Filling:

  • 2 cups whole milk
  • 6 egg yolks
  • 1/2 cup maple syrup
  • 1/3 cup cornstarch
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • pinch of salt
  • 1 tsp vanilla
  • 3 T butter cut into chunks
  • 2 bananas for layering

Topping:

  • 1 cup cream
  • 2 T maple syrup
  • 1 tsp vanilla
  • 2 T sour cream
  • 1 banana for garnish
  • cinnamon for garnish
  1. Preheat oven to 350F (180C)
  2. Crust: Cut butter into flour with a fork. Mix in maple syrup until dough forms. Place dough on floured surface and roll out pie crust. Put in parchment lined pan and score with a fork. Bake about 20 minutes until browned. Store in fridge until ready to assemble.
  3. Pastry Cream: Boil milk. Whisk together egg yolks, maple syrup, cornstarch, cinnamon, nutmeg and salt. Temper eggs with a little of the hot milk and then combine everything together over medium heat (whisking the whole time). When mixture has thickened take off of the heat and add vanilla and butter. Store in airtight container in the fridge until ready to assemble.
  4. Topping: Whip cream. Add in maple syrup and vanilla. Fold in sour cream.
  5. Assemble: Layer pastry cream-bananas-pastry cream-bananas until pie shell is filled. Top with Cream and garnish with banana and cinnamon.
  6. ENJOY! Maybe even with your grandpa if he’s still around…
