Lemon bars

Discovering these bars was spurred on by a gentle nudge from big sis (Tica) to add to her amazing post of when life gives you lemons…after some pinterest trolling I came up with my own version of these simple, healthy and delicious treats. Hope you enjoy as much as my kids did!

Ingredients:

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 2 cups dates
  • 1 t vanilla
  • Juice and Zest of 2 lemons
  • 1/4 tsp salt
  1. Process everything until a dough forms
  2. Press into a parchment lined pan
  3. Freeze until set
  4. Cut or roll into balls & serve or store in the freezer
