Paleo Lemon Blueberry Muffins


Tica here! These muffins are a product of my most common version of baking–Improvisation. That’s how we roll in this crazy household of twelve. 😜 These nutritious muffins are a winner! I think you’ll like em too…

Paleo Lemon Blueberry Muffins 

1- Preheat oven to 350F (175C).

2- Combine Dry Ingredients:

1c Almond Flour   1/2c Coconut Flour   1/2tsp Salt   1/2tsp Baking Soda   1c Blueberries (fresh or frozen)

3- In a separate bowl Combine Wet Ingredients:

3/4c Coconut Oil   4 Eggs   1/2c Honey   2 Lemons (Zest & Juice) 1/2tsp Vanilla

4- Mix Wet and Dry together.

5- Fill muffin tins with batter (using liners is easiest) and bake for 25-28 minutes.

*batter will look runny at first and then look very dry after the coconut flour soaks up the moisture; that’s ok… roll with it. 😘
